Well, this lesson's all about ingredients, equipment, and food skills.

Let's get started.

So what are we going to learn? What are we gonna be able to do by the end of this lesson? Well, I hope that you'll be able to name and suggest uses for different ingredients and cooking equipment from around the world.

Let's look at some key words that we're gonna be using today.

The first one is ingredients, and these are foods that we use in cooking.

The second one is equipment, and these are different utensils that we use to prepare and cook food.

The next one is food skills, and these are ways of preparing and cooking food.

And lastly, the word cooking, which is about preparing and heating food in a particular way.

So let's get started with the first part of the lesson, which is all about cooking around the world.

So around the world, people cook and eat different food, and people use a range of different ingredients, equipment and food skills.

And there are lots of different dishes that are made based on the different ingredients, equipment and food skills that are used.

So ingredients are used in cooking, and there are different types of ingredients that can be used.

So, for example, there could be different types of fruit that are used, or perhaps vegetables, or herbs, or different spices perhaps, or perhaps flour.

Hmm, what dishes are these used in? Can you name some? Well, how about a fruit? Well, maybe it's a fruit salad perhaps, or maybe it's a crumble.

Or vegetables.

What could we have vegetables in? Or maybe a lovely vegetable curry, for example.

Or what would we put herbs in? Well, we might put that in a delicious couscous salad, for example.

Or perhaps in a spaghetti bolognese.

Or spices? We could use spices perhaps in a lovely chilli con carne or perhaps a curry.

And flour? Well, we could make breads, couldn't we? Or perhaps biscuits or cakes.

So there are lots of different dishes that we could make using ingredients.

Other ingredients could include things like beans, tofu, fish, eggs, and meat.

Hmm, have you eaten any of these? I wonder what dishes could be used with these.

Beans? Well, perhaps a lovely bean salad, for example.

Tofu? Perhaps that's stir fried with vegetables and noodles.

Fish? Hmm, fish fingers? A lovely fish pie.

Eggs? Oh, I love an omelette made from eggs.

And perhaps meat.

Well, maybe things like sausages or hamburgers, for example.

So there are lots of different things that we can cook using these ingredients.

How about other ingredients like soy milk, for example, or cheese, rice, pasta, or perhaps oil? Hmm, I wonder what dishes these are used in.

Or soy drink, for example, we could use to make a sauce, for example.

Or cheese? Hmm, maybe a cheese and onion sandwich.

Rice? Oh, we can boil that perhaps to make a delicious rice salad or to have with a lovely curry.

And pasta? Hmm, I quite like macaroni cheese or perhaps spaghetti bolognese.

And oil? Often we use oil to help cook other foods.

For example, we might fry some onion, some garlic, and tomatoes.

So there are lots of different types of uses for these ingredients.

So let's just check if you've been listening.

So which one of these is tofu? Is it A, B, or C? Yes, that's right, it's B.

That's tofu.

Well done.

So equipment or sometimes called cooking utensils are used to prepare and cook food, and there are lots of different types.

Let's look at a few together, shall we? This one's a vegetable knife, or perhaps a vegetable peeler, or a grater, or a juicer, or a spoon.

Hmm, how do you use these? What would you use these for when you are preparing and cooking food? Let's have a look together, shall we? Well, the vegetable knife, yes, we'd use it to cut something, wouldn't we? And the peeler? Yes, we could peel something.

Maybe some carrots or potatoes.

The grater? Yes, we could grate things like, hmm, cheese, for example.

Well, how about the juicer? So perhaps we're juicing oranges, for example.

Or the spoon we would use to mix everything together.

Perhaps we've made a lovely salad and we're mixing all the wonderful foods together.

How about other types of equipment? Oh, what's this? It's called a tandoor.

And this? A wok.

How about this one? I think you may have seen this one before.

The saucepan.

And these? Steamer.

These ones are made from bamboo.

How about this one? A colander.

Hmm, what are all these used for? These ones are a bit more unusual, aren't they? Let's have a look together.

Look closely at the photograph.

Let's start with a tandoor, shall we? And if we look closely at the photograph, you can see bread, and the bread is baking on the side of the tandoor oven.

And the wok? Well, that's used to fry, or sometimes called stir frying.

The saucepan? Well, we can use that to boil something or simmer something.

The steamer? Well, we can steam things.

We could steam things like fish or vegetables.

And the colander? We use to drain something.

So perhaps I've opened a can of beans and I'm straining the beans through the colander.

So these are different types of equipment we use to prepare and cook food.

Let's look at some more example, shall we? Ooh, a tagine.

Oh, a paella pan.

A spurtle.

Whoa, I wonder what that is.

A whisk and a ladle.

Hmm.

So what do you think these are used for? Let's start with a tagine.

Well, we use this to roast things and it goes into the oven, and you can roast things like vegetables and meat.

While the paella pan is used to fry, as well as sort of steam as well.

And the the spurtle? Well, that's used to mix.

And in fact, it's used to mix porridge.

And the whisk? We'd use that to whisk something.

So it might whisk a sauce, for example.

And lastly, a ladle.

We might ladle or serve soup, for example, perhaps on the saucepan into our bowl.

So again, lots of different types of equipment.

So what piece of equipment is being shown here? A, B, or C? Yes, that's right.

It's a spurtke.

Do you remember? It's used to mix porridge.

This is traditional piece of equipment.

So when we think about cooking, it's all the steps needed for making a dish using different ingredients and equipment.

And we use different food skills to prepare and heat the food in different ways.

So true or false? Cooking means to add heat to food only, such as baking, boiling, and grilling.

Yes, that's false, isn't it? And why is that? Well, the term cooking includes the preparation of the food.

So things like to peel, slice and mix, and also the heating of the food.

So, for example, things like baking, boiling, and grilling is a term used to describe the entire process of cooking.

Well done if you got that correct.

That's quite a tricky one, isn't it? So there are different types of food skills that we can use for preparing food.

For example, peeling, cutting, grating, and mixing.

But what equipment is being used here to show these food skills? Yes, that's right.

A vegetable peeler is being used for peeling.

A vegetable knife is being used for cutting, and it's on a chopping board as well.

And grating? That's using a greater, and that's also on a chopping board.

And mixing? Well, we're using a spoon.

We're mixing with a spoon in a bowl.

Well done if you've got those right.

There's lots of different food skills aren't there? Let's look at a few more.

Measuring, rubbing in, cutting out, rolling out.

Hmm, have you done any of these before? Other food skills include using the hob on a cooker.

So we might use it for boiling, for example, stir frying, or steaming.

Or perhaps using the oven.

And we could use that for baking, for example, or perhaps roasting.

And we could be using the grill as well.

And here, we might be grilling something or toasting some food.

So there are different food skills that we can use to cook food.

Other skills we might use to cook food include using the barbecue, for example, or perhaps doing some tandoori, or perhaps some teppanyaki, or perhaps air fry.

Have you seen any of these before? Or the barbecue here that has skewers on it at the moment.

But barbecuing, you could barbecue things like fish or burgers or perhaps vegetables.

And the tandoori.

That's cooked in a tandoor, hence the name.

Or perhaps teppanyaki, which is a Japanese style of cooking and the food is cooked on a hot plate.

And lastly, the air fryer.

So now I've got a task for you.

So I want you to name the ingredients you can see here, and I also want you to think about how could they be used.

What would you do with them? So pause the video, have a good go, and we'll come back and look at some examples together very soon.

Let's look at some examples, shall we? Well, the first one is called pasta.

I'm sure you got that one right? And perhaps we could use it in a salad or perhaps spaghetti bolognese.

The second one? Well, they're beans, aren't they? And in fact, they're called red kidney beans.

And we could use those in chilli con carne or perhaps different salads.

The third one, flour.

And we could use that to make bread, cakes, and biscuits.

And the last one? Well, that's lots of different types of vegetables, and there's so many uses for those.

Perhaps they could be used in curries or as a side dish, or on top of a pizza.

So whatever you've got, well done.

There's lots of different ingredients and they can be used in lots of different ways.

How about these pieces of equipment? Can you name these pieces of equipment and tell me what they use for? Again, pause the video.

So how did you get on? Let's look at some examples, shall we? So the first one is a wok, and we can use that to stir fry food.

So, for example, we could stir fry noodles, vegetables, and tofu.

The second one, they're using a rolling pin, and that could be used for rolling out pastry, for example.

The third one? Well, that's a grater, and I could use that for grating cheese, for example.

And the last one? Yes, that's right, is a juicer.

And we could use that for juicing an orange.

Now let's move on to the second part of today's lesson, which is all about successful cooking.

So when we prepare and cook, we want it to be successful, don't we? And we want it to look, smell, and tastes great, and we want it to be safe to eat.

Hmm, so what makes you a successful cook? Hmm, can you tell me why? Well, I think it's working safely and hygienically and making sure that the food looks, smells and tastes great.

So to be successful, we need to follow the recipe.

So can you see the recipe here for the leek and potato soup? So we need to follow this closely to make sure that the soup is successful at the end.

We need to use the right sorts of ingredients, we need to use the right types of equipment, and we need to use the right type of food skills, which are in the method.

So we need to follow the method carefully.

So a true or false here.

"We should follow the recipe so the dish is successful.

True or false?" Yes, that's true, isn't it? And why is that? Well, the recipe lists the ingredients, the equipment, and the method, the food skills that we need to make the dish successfully.

So to be successful, we need to use the correct ingredients for a recipe.

We need to read the ingredient list.

And this shows us the type and the amount of each ingredient we need.

So, here, we can see the amount of each ingredient we need, as well as the type that we need as well.

You can see here zoomed in, you can see the different measures, the amount, as well as the type of ingredient.

We also need to get the right equipment to make sure we're successful.

So again, we need to read the equipment list.

It shows us what's needed.

So here it is in this recipe.

And zoomed in, we can see here, can't we, it lists all the different types of equipment we need to make these veggie kebabs.

We also need to make sure we use the right food skills to be successful.

And for that we need to read the method carefully so we know what we're doing.

Here's the method here.

It tells us how to make it, and it also tells us the different food skills we need to use.

And if we zoom in, you can see here it lists the food skills, things like whisk and cut and thread.

So we need to make sure we read the method and use our food skills to be successful.

So let's just check that you've been listening, shall we? So which parts of the recipe is being highlighted here? Is it A, B, or C? Yes, that's right.

It's C, isn't it? It's pointing to the method, which is showing us the food skills that we need to use.

And how about the food skills? Where are they? Well, look at these.

They're all in the method, aren't they, and I can highlight them all.

There's lots of different food skills I need to use to make the soup successfully.

So now let's move on to the third part of the lesson, which is all about planning to make a salad.

Hmm, that sounds good to me.

So salads can include a wide range of ingredients from the UK and around the world.

Here's some examples.

Look at this one.

It's called a Waldorf salad.

Or this one? A Caesar salad.

Or this one? A nicoise.

There are lots of different salads from the UK and around the world.

And what's your favourite salad? Can you tell me? Is it any of these or is it something different? There are lots of different types of salads that we can have.

And other salads include these types.

So, for example, tabbouleh.

That looks lovely, doesn't it? Can you see the tomatoes? Or how about this one called a fattoush? That looks amazing, doesn't it? How about this one? Coleslaw.

I've heard that one before.

Hmm, have you eaten any of these? I wish I have.

They look absolutely amazing salads, don't they? So which of these is the type of salad? A, B, or C? Yes, that's right.

It's A, isn't it? It's a Caesar salad.

Well done.

So to make a salad, different pieces of equipment and food skills are used depending on the ingredients.

So we choose the ingredients that we like very often, don't we? We would pick things we don't like.

And a salad could include lots of different ingredients.

So, for example, different types of vegetables or fruit or perhaps potatoes, rice, pasta, and noodles.

Or how about some beans, nuts, fish, eggs and meat, or perhaps some cheese or an alternative as well.

And very lastly, perhaps a nice dressing on top.

So there are lots of different types of ingredients we can choose to put in our salad.

And we need different sorts of equipment to prepare and cook these foods.

And salad ingredients can include these things.

So, for example, vegetables and fruits.

There are lots of different varieties.

And do you remember, we should always go for five a day and these might be peeled, grated, or sliced, for example.

Well, how about these? Potatoes, rice, pasta, noodles, or couscous? Hmm, they look great.

And these would be cooked, first of all, so we might boil them.

So we are using different types of food skills to prepare and cook these ingredients.

How about these? Beans, nuts, tofu, and hummus.

Hmm, these would be nice on a salad, wouldn't they? Hmm.

Can you name any different types of beans or nuts, for example? Hmm.

Well, I know those are definitely red kidney beans.

What about other types of beans? Well, there are things called black eyed beans, for example.

They're absolutely delicious too.

How about different types of nuts? Well, yes, I'm sure many of us heard of a peanut before.

But how about a cashew nut or even a macadamia nut? There are lots of different varieties of foods that we can use in a salad.

Other salad ingredients include things like fish.

So, for example, we might use can tuna fish in water or perhaps eggs that have been boiled, removing the shell, of course.

Or perhaps different types of meat.

So, for example, cooked and sliced chicken.

So we would've prepared these foods in different ways using different food skills.

And remember the tuna, the eggs, and the chicken would have to be cooked before we use them in the salad.

So let's have a quick check that you've been listening, shall we? So which ingredient needs to be cooked first? A, B, C? Yes, that's right.

It's A, isn't it? It's the chicken.

The slice of the chicken need to be cooked.

But is there anything else? Yes, that's right, the eggs.

The eggs have to be cooked.

And these ones have been boiled and then the shell has been removed and then cut in half.

So we've used lots of different food skills to prepare these foods.

What else can salads include? Well, they could include things like cheese, for example, or an alternative, and perhaps a lovely dressing on top.

And the cheese could be grated and we could use a greater to do that.

So again, we're using different ingredients and different food skills and pieces of equipment.

So I have a task for you now.

So what equipment and food skills should Jacob use to prepare this simple salad? So the ingredients are sliced tomato, grated carrots, grated cheese, and cooked pasta.

So, what equipment should be used and what food skills should be used? Good luck.

Okay, so how do you get on? Let's look at this example together, shall we? So the sliced tomato, well, the equipment would've been a vegetable knife and a chopping board.

And the food skill? We're all gonna be cutting, aren't we? Slicing.

How about the other one? Grated carrots.

Well, we are gonna peel the carrots, first of all, and we're gonna peel it on a chopping board, and then we're gonna use a grater to grate it.

So our food skills are peeling and grating.

How about the third one? Grated cheese.

Well, we're gonna use a chopping board and a grater.

So we rest the grater on top of the chopping board.

And the food skills? Yes, that's right, it's grating.

And the last one, cooked pasta? Well, we would use a saucepan to boil the pasta to cook it, a colander to drain the pasta, and we would've used a hob to cook, wouldn't we, as well? And we probably would've used a stirring spoon as well, just to stir the pasta in the water.

And the food skills? Well, we would've been boiling using the hob and draining as well.

Well, I think you've done brilliantly today.

Well done to you.

And that's quite a tricky task, but you can see here that we're using different equipment and different food skills to prepare our different ingredients.

Well done.

Got another little task for you here, and I want you now to plan and make a salad.

Hmm, can't wait.

And I want you to list the different ingredients that you're gonna use, the equipment you're gonna use, and the food skills that you're going to use as well.

So, remember, you can use lots of different types of ingredients to perhaps its different types of vegetables and fruit.

Things like potatoes, rice, pasta, and noodles, perhaps beans, nuts, fish, eggs or meat, cheese, or an alternative, or perhaps also addressing.

So, good luck to you.

So write down the ingredients, equipment, and food skills you need to make your delicious salad.

Okay, so how do you get on? Let's look at an example, shall we, together? So ingredients? Well, this person's put rice.

Hmm, I like a rice salad.

And the equipment? Well, they're gonna weigh the rice, first of all.

And then they've got a saucepan.

Where are they gonna use the saucepan for? Yes, that's right.

They're going to use the weighing scales to weigh and the saucepan to boil the rice.

How about the carrots? Well, they're gonna use a vegetable peeler, a grater, and a chopping board.

So here, they're going to be peeling and grating.

How about sweet corn? Well, they're gonna use a sieve.

And why are they going to use a sieve? Well, they're gonna do some draining.

So they're gonna drain the sweet corn from a can.

Or how about mango? Oh, I do like mango.

Well, they're gonna use a vegetable peeler, a knife, and a chopping board.

So here, they're going to be peeling and cutting, cutting into chunks.

And lastly, they're gonna use red pepper.

So here, they're gonna use a knife and a chopping board, and they're going to be cutting and they're gonna be cutting the red pepper into slices.

So you can see here that we've used different types of ingredients, different equipment, and we've used different food skills to prepare them.

Brilliant.
