Hello, thanks everyone so much for joining me today.

I'm Mr. Ballam, and today we're going to be making veggie kebabs.

I really hope you're gonna enjoy this lesson.

We're gonna learn loads, particularly around different important food skills, which you can use in this lesson and other things in the future.

And also, we're gonna be learning a little bit about the origins of kebabs.

But let's have a look at what we're going to be learning.

What's the outcome? Well, the outcome's going to be you're gonna be able to make veggie kebabs, which will be brilliant, won't it? The first one is kebab and kebabs are vegetables, fish, or meat cooked on a skewer.

The next word is threading, and this is where you push food onto a skewer.

So a kebab has the vegetables, fish, and/or meat threaded onto the skewer.

The next key word is marinade.

Now, a marinade adds flavour to a dish.

So we're gonna marinade the vegetables to give us some extra punch, some extra flavour.

And lastly, the word is recipe, and a recipe is a set of instructions for making a dish.

So we're going to be following a recipe today, the recipe on how to make veggie kebabs.

Let's get started with the first part of the lesson, which is all about reading a recipe.

So we've just covered this, haven't we, that a recipe is a set of instructions for preparing and cooking a dish.

Now, our recipe has some main parts.

The first part is its name, and this recipe name is veggie kebabs.

The second part of a recipe is its list of ingredients, and you can see the ingredients in this recipe have been highlighted.

The other part are the pieces of equipment that we need.

And lastly, the method.

The method is how to make the recipe.

Now, also, a recipe might include a photo.

And you can see here there's a lovely photo of the veggie kebabs.

Okay, so if you've been listening.

So, true or false? A recipe is a set of instructions.

That's true, well done, well done if you've got that correct.

That's right, a recipe tells us the ingredients and the equipment, as well as how to make it, its method.

Well done.

Now, the ingredient list shows really important information and it's showing us two key things.

The first is how much you're going to need of each type of ingredient.

And in the second one, yes, the type of ingredient you need or the food that you need.

So if we have a look at the top one, we're going to need one five-milliliter spoon, so that's the amount we need, of soy sauce, which is the ingredient that we need.

Have a look down the bottom.

We need four small mushrooms. So the four is the quantity that we need and we've got small 'cause we don't want a great, big mushroom, so we've got four.

And then the ingredient is mushrooms. So we can read an ingredient list really well 'cause it shows us how much we need and what the ingredient is as well.

Now, we need to weigh and measure the ingredients, that's really important.

And to do that, we might use weighing scales for things like flour and rice, for example, we might use a measuring jug for things like water or milk, or we could use measuring spoons and we could measure things like herbs or oil.

The next part of a recipe is its list of equipment.

So this shows you all the equipment you need to make the recipe successfully.

And we need to make sure we get all of our equipment ready at the start, so we're ready to cook, ready to go.

Now, let's have a quick check, shall we? So, which part of the recipe shows you which food you need? Is it A, ingredients, B, equipment, or C, method? That's right, it's ingredients, A.

So this shows you the types of food that you need to make the recipe.

Well done.

Now, the next part of the recipe is its method and this is the set of instructions and it shows us how to make the dish, so we follow them step by step, we go through the method carefully.

Now, why do you think we should follow the method? Hmm.

Well, if we didn't follow the recipe, the dish may not come out very well, we may not be very successful, we may not know what we're doing.

So it's really important to follow the method carefully so we make the recipe and we're successful in the end.

Now, there's a little task for you.

Now, Izzy has some questions about a recipe.

Let's try and help her, shall we? So her question is, what does the ingredient list show? Hmm.

Have a think.

Can she use different equipment? Hmm.

And why is the method important? Pause the video, have a go, and we'll come back together very, very shortly.

Here's some answers that might be similar to yours.

So the first one is, what does the ingredient list show? Well, it shows the ingredients and how much we need of each, doesn't it? So you remember? It shows us the quantity and the type of ingredients.

And can Izzy use different equipment? No.

Izzy should follow the equipment that's listed in the equipment list.

And the last question, why is the method important? Well, it shows us how to make the recipe really well.

So if we don't follow it, it may not come out very well.

Well done.

I'm really pleased with your progress.

Let's move on to the next part of the lesson, making my veggie kebabs.

Now, kebabs are thought to originate from the Middle East, and that's a country like Turkey, for example.

And there are lots of different variations in different countries throughout the world.

I mean, you can see this photo here is really colourful, isn't it? And this one's got a little bit of meat, but mostly vegetables, but really colourful, bright vegetables on the kebab.

And kebabs are vegetables, fish, or meat cooked on a skewer.

The vegetables, fish, or meat are threaded onto a skewer.

Can you see in the photo? There's the skewer, there's a wooden skewer, and the pieces of vegetables here have been threaded onto the skewer.

And these are being brushed with a marinade and the marinade gives an extra flavour to the vegetables, it really helps.

So, true or false? Kebabs include fruit, nuts, and beans.

That's false, isn't it? And why? Well, we know that kebabs include vegetables, fish, or meat and we brush them with a marinade for flavour.

Well done.

Now, when preparing and cooking food, we need to work safely and hygienically.

Oh, they're really long words, aren't they? Safely and hygienically.

And we work safely to prevent accidents.

And we work hygienically to be clean.

So we need to work safely and hygienically 'cause we don't want any accidents, do we? And we want to make sure we're clean.

So, why is it important to work safely and hygienically? Is it A, to read the recipe well, B, to prevent accidents, or C, to be clean? That's right, it's B and C.

It's important to work safely and hygienically to prevent accidents and to be clean.

Well done.

So to make the veggie kebabs, what are we going to be doing? Well, we're going to be making a marinade, and we're gonna be making that by whisking the ingredients together, and in this case we're gonna use a fork.

But you can also make a marinade by putting the ingredients in a small jar and shaking it.

That would be quite good fun, wouldn't it? So that's how we're going to be making the marinade.

We're gonna be whisking it or you might be able to shake it.

We're also going to be cutting, and we are going to be cutting using a technique called the bridge hold.

So we're going to be using the bridge hold cutting technique.

And if you are not very confident in using that, you could use a fork secure method, and this is where we hold the food with a fork and then cut it with a knife.

Now, let's have a look at the bridge hold in a little bit more detail, shall we? So I'm just going to click on the video.

And this video is showing us how we put the food on the chopping board and we hold it over the top of the food.

We've got a hand like a little bridge and we put the knife through the middle.

I always think of it like a train going through a bridge.

But we can see here that the knife is away from our finger and from our thumbs and it's safe.

So let's check that you've been listening, shall we? So, what is this picture showing? Is it showing cutting, the claw grip, cutting, the bridge hold, or cutting, the fork secure method? That's right, it's showing the bridge hold, isn't it? The bridge hold that we've just been looking at.

Well done.

And you can see it's the bridge hold by the way they've got their hand positioned over the food making with the hand a little bridge.

Well done.

Also to make our veggie kebabs, we're going to be threading, and this is where we thread the ingredients onto a wooden skewer.

Now, we need to be careful because the skewers are sharp.

And you can see in this photo here, they've actually got the food on the chopping board and they're pushing the skewer through the food.

So they're threading it by pushing the skewer onto the food, which is resting on top of the chopping board.

It's a safe way of doing it.

And you can think about making lots of different patterns.

And I can see Lucas here is quite keen to make repeating patterns with these different pieces of vegetables.

But be creative.

We're also going to be brushing and we're gonna be brushing the marinade over the top of the vegetables, which have been threaded onto the skewer.

Now, your teacher is going to take your kebabs away and cook them for you, that's so it's nice and safe.

Now, which of these is showing threading? Have a little look.

Is it A, B, or C? That's right, it's C, isn't it? C is showing threading.

You can see here they're pushing the skewer through the vegetables, threading the vegetables onto the skewer.

Right, so now let's make our veggie kebab, shall we? Now, before you cook, you need to make sure you are ready to cook, so that means things like tying back long hair, washing your hands, for example, and wearing an apron.

But also you need to make sure you've got your ingredients and your equipment ready, so you're ready to go, you're ready to cook.

And then while you are cooking, I want you to think about being safe and hygienic when you are cooking, and also I want you to think about all the food skills that you're going to be using.

So, do you remember what they were? Yes, there's quite a few, isn't there? But we're gonna be cutting and threading and brushing.

Lots of different food skills today.

And here is the recipe.

So here's all the ingredients that you need.

Do you remember? The ingredients show you how much you need of something and what the ingredient is.

So here's the list.

And here's the equipment that you need as well.

So here's what you need to have ready to make it successfully.

And the last part of the recipe is the method.

So now you're going to make your veggie kebabs.

Let's have a look, shall we? Let's look at the steps you followed to make your veggie kebabs.

So the first step is that we whisk the soy sauce, oil, and herbs together to make a marinade or you might have put it into a jar and shaken it.

So you made the marinade, then you cut the courgette into four pieces, you cut the pepper into four pieces, then you threaded all the vegetables onto the skewer.

You then placed them on the foil, which is on the baking tray, and then you brushed them with your marinade.

And lastly, they were cooked.

So were they either grilled or baked in the oven by your teacher.

I'm sure it smells absolutely wonderful.
