Today, this lesson is all about making an international salad.
Doesn't that sound amazing? Let's get started, shall we? So what are we going to learn? Well, by the end of this lesson, you are going to make an international salad.
Oh, I wonder what's gonna be in that.
But before we get started, let's go through a few keywords that we're going to learn today.
The first one is salad.
And this is a cold dish of different foods, mainly vegetables.
You've probably had a salad before.
The next one is salad dressing, and that's a sauce for salads.
And the third keyword is senses, and that's our sight, smell, and taste.
Okay, so let's get started, shall we? So the first part of the lesson is all around planning my international salad.
Now we can get inspiration for dishes by looking at and tasting food and cuisines from around the world.
Here's just some examples.
Just look at these.
Don't they look amazing? Aren't they really interesting? There's different colours and shapes, from all different places.
And what's your favourite food from around the world? Hmm, I quite like sushi, but I also like toad in the hole.
Can you see those on the screen? Now, inspiration for our international salad might come from: ingredients from different countries, or perhaps trying a traditional recipe.
Or how about when we're going on visits or holiday? We can get ideas then too, can't we? And also, if we visit cafes and restaurants.
All of these could give us some inspiration, some ideas for our international salad.
Okay, a quick check for understanding.
So, true or false? We can get inspiration for dishes by cooking the same recipes.
It's false, isn't it? And why is that? Well, we get inspiration for dishes by looking at and tasting foods and cuisines from around the world, not just having the same thing all the time.
Well done if you got that correct.
Now, what's Sofia saying here? Shall we read it together? "I've been told that a salad must include lettuce, cucumber and tomato." I wonder what Lucas is going to say.
"No! Salad can have lots of different ingredients.
Be creative and take inspiration from around the world." Wow.
I think Lucas is right.
We can use lots of different foods in our salads, not just lettuce, cucumber and tomato.
Yes, Lucas.
Let's find out more.
True or false? A salad must include lettuce, tomato, and cucumber.
Yes, that's false, isn't it? And why is that? Well, a salad can contain lots of different ingredients and we should be creative and take inspiration from around the world.
So let's have a look at some international salads, shall we? Here's one here.
Have you had this before? Tabbouleh? Look at it.
Doesn't it look amazing? And this is from Lebanon.
Well, how about this one? This is called a Greek salad.
I wonder where that's from.
Can you guess? Yes, that's right.
It's from Greece.
Now, what ingredients are in these salads? Can you tell me? Look really closely at the photos.
Let's start with the tabbouleh first of all, shall we? Well, the first thing is couscous.
And you may have had couscous salad before.
What else can you see? Hmm? Yes.
Tomato.
Anything else? And mint.
Yes, mint is a lovely, fresh herb.
And how about the Greek salad? What can we see here? Yes, we can see feta cheese.
That's that white cheese just on the top of the salad, and tomato and onion, and also olives.
So these are different ingredients that are in these two different salads.
Let's look at two more, shall we? This one is called som tam and it's from Thailand.
Well, how about this one? A nicoise salad from France.
Have you had any of these before? So what ingredients are in these salads, do you think? Hmm, look closely at the photo.
Can you tell me? Well, let's start with the som tam, shall we? It's papaya and papaya is a type of fruit.
It also contains peanuts.
Wow.
Also green beans and tomatoes.
Wow, that sounds like a delicious salad, doesn't it? Let's have a look at nicoise.
What can you see on this salad? Yes, that's right.
There's egg, isn't there? Anything else? French beans, tomatoes, tuna.
Anything else in this salad? Yes, there's some potatoes hidden underneath too.
So there are lots of different types of ingredients we can use in our salads, just like the ones I've shown you.
And salads are healthy meals because they contain lots of fruit and vegetables.
Just look at these.
Wow, orange in a salad?! It's yummy.
Now these ingredients might be peeled, might be grated, or might be sliced.
So there are lots of different ways we can prepare our fruits and vegetables.
And salads can contain lots of different foods.
So they might contain potatoes, rice, pasta, noodles or couscous.
Do you remember? We looked at couscous.
And these need to be cooked, for example, boiling, before we use them in our salads.
Salads can also include things like beans, for example.
And these are red kidney beans, what about hummus? Mm, delicious.
And this one's with herbs on top.
Tofu, sliced.
And eggs, boiled too! So lots of different types of ingredients.
Have you eaten any of these? Which one's your favourite? Can you tell me? Hmm.
Yes, I do like beans in my salad, and I do like egg too.
Salads can also include things like cheese, for example.
What's happened to this cheese here? Did you say grated? Well done.
Yeah, this is grated cheddar, for example.
Or perhaps fish.
Nah.
Who can tell me what type of fish this is? It's very popular.
Yes, it's canned tuna fish.
Or how about chicken or perhaps ham? And this is cooked and sliced.
Hmm, can you name any other examples that we can include in our salad? Well, there are lots of different types of cheeses, aren't there? Some people really like blue cheese, for example.
Or how about fish? There's lots of different types of fish.
We could have bits of salmon, for example.
And there are different meats as well, if you eat meat.
So for example, I could have some cooked beef.
So there are lots of different ingredients we can include in our international salads.
Also our salads might include things like nuts, seeds, fresh herbs and chilies.
But if we're having nuts or seeds, we need to make sure we check for allergies first of all, that's if someone has a bad reaction to nuts or seeds.
Now do you remember the keyword we looked at the beginning? The salad dressing.
Do you remember? It's a sauce for salads and there are many different types that we could use.
So for example, there's mayonnaise.
Have you had mayonnaise before? I'm sure some of you have.
Or a French dressing.
Well that sounds fancy, doesn't it? Or how about a honey and mustard dressing? Oh that sounds delicious.
A Caesar salad dressing or perhaps a thousand island dressing? And there are many, many more different types of salad dressings.
Now have you tried a salad dressing before? Was it any of these? If not, what was it? Did you enjoy it? There are lots of different types of salad dressings that we can put on our salad.
And a salad dressing is usually made with these ingredients.
It's usually made with oil and then vinegar or citrus juice, and citrus juice are fruits like lemons or limes or oranges.
So it's oil and vinegar or citrus juice.
And also it includes other flavourings.
Can you tell me what these are? Yes, it's garlic and fresh herbs.
And a salad dressing is usually about three quarters of oil and one quarter of vinegar or citrus juice.
We can include lots of different ingredients in our salad dressing too.
Let's look at some examples together, shall we? Wow, yes.
Citrus fruits.
Do you remember what they were? Can you tell me? Yes.
Lemons, limes and oranges.
They're all types of citrus fruits.
Oh, how about cheese? Oh, that would be nice wouldn't it? A nice cheesy sauce on top of my salad.
Fresh herbs.
Maybe things like mint for example, or oregano or coriander.
Or how about garlic? Oh, I do like garlic.
And lastly, maybe some mustard as well? These are all delicious types of ingredients I can use in my salad dressing.
Wow, we're getting really creative, aren't we? And some salad dressings are creamy and others are tangy.
It just depends on the type of ingredients that you use.
So let's have a quick check, shall we? So what are the ingredients used to make a salad dressing? Yes, it's definitely B.
Is there anything else? That's right, it's C as well.
We make a salad dressing using vinegar and oil.

Okay, I've got a task for you now.
This one's quite fun.
And I want you to create a salad using Jacob's salad generator.
So the first thing I want you to do is to think of four random numbers between one and five.
So in each box, put a number between one and five.
Then for the four numbers that you've chosen, find the ingredients in the chart below.
So for example, if your first number was number one, you look at your first choice, number one, and you go down to one and it says tomato.
And if your second choice was number two, you go down to two and it's noodles.
Okay, so using your four random numbers between one and five, use Jacob's random salad generator to come up with some brilliant ideas.

So I've chosen four different random numbers between one and five.
My first number is five, my second number is two, then I've got four, and then I've got the number one.
So these are my four random numbers between one and five.
Now let's look at the chart and see what ingredients I'm going to use in my salad.
Wow, look at this.
So my first choice, my first number was number five, and I'm gonna be using apple.
Wow! And then my second number was number two, and I'm gonna be using noodles.
Then my third choice was number four.
I'm gonna be using cheese.
And then lastly, my fourth choice was number one.
And I'm going to be using mayonnaise.
Wow, what a fantastic salad.
An apple, noodle, cheese and mayonnaise salad.
Well, I think I'm gonna enjoy that.
What did you come up with? Why don't you try some different random numbers.
Think about all the different combinations of salads you could create.
Well done to you.
So now we're gonna move on to the second part of the lesson, which is all about making and evaluating your international salad.
So to make your international salad, you're going to be using lots of different food skills, depending on the ingredients that you've chosen.
So we're gonna look at some of the skills that you might use.
So your food skills could include: things like measuring, for example.
So you might use the weighing scales, 'cause you might weigh things like potatoes, for example, or rice, or perhaps a measuring jug or perhaps measuring spoons.
So you're gonna be measuring accurately and precisely.
So what equipment would you use to weigh ingredients? A, B, or C? Yes, that's right.
It's C, isn't it? You would use weighing scales to weigh ingredients.
Well done.
Other food skills you might use are things like peeling, for example.
What's happening here on the screen? Yes.
A carrot is being peeled, isn't it? Using a vegetable peeler.
And you need to be very careful using a vegetable peeler as it's very sharp, and you're gonna peel away from yourself, which is much safer as well.
So let's have a look at peeling in action, shall we? So here's the pupil, picking up the carrot, picking up the peeler.
And halfway down, they're just gently rubbing the peeler down the carrot.
And they're doing this on a chopping board and they're peeling away from themselves so it's lovely and safe and secure.
Then the pupil will turn carrot around and peel the other end.
Other food skills you might use are things like cutting and you might use a couple of different techniques.
The first one is called the bridge hold and the second one is called the claw grip.
So let's have a look at these two cutting techniques in action, shall we? So this is the bridge hold.
The pupil's putting the tomato gently on the chopping board.
They're gonna pick up their knife, put their hands over the tomato and run the knife through to cut it.
It's a very safe cutting technique.
If we look at it again, they're making a bridge with their hand and then cutting through so the knife is nowhere near their fingers.
Next, let's look at the claw grip.
So here the pupil is holding the cucumber down and making a claw with one hand.
Then they're running the knife down, slicing, making little circles of cucumber, and they're using their fingers as a guide.
Other food skills we might use are things like grating, for example.
And we need to be very careful when we're using a grater 'cause it's very sharp.
Let's look at grating in action, shall we? So here the pupil is holding the grater down on the chopping board so it's nice and secure and rubbing the carrot down the grater, and they're gonna grate as much as they can, but being careful not to grate their fingers or knuckles.
Other food skills we might use are things like mixing, for example.
And we're gonna mix all the salad together really well and we're going to use a spoon to mix.
And when we've made our salad, we might evaluate it by using our senses and we might use our senses to describe how the salad looks, smells and tastes.
And our senses include sight, smell, and taste.
So we're using our eyes, our nose, and our mouth.
And when we've made our salad, we could ask other people to judge our salad by using their senses.
So true or false? We can ask people to judge our work using their eyes, nose and mouth.
Yes, that's true, isn't it? And why is that? Well, we use our senses to describe how a food looks, smells, and tastes.
We use our eyes, our nose, and our mouth.
Well done.
Okay, so now you're going to make your international salad.
And you should have really thought about what ingredients you're going to be using.
I'm sure it'll be delicious, whatever you do.
But before you cook, I want you to think about these things.
I want you to get ready.
So I want you to tie up any long hair that you've got, remove your jumper, wash your hands, and wear an apron.
I also wanna make sure that you've got all your ingredients and your equipment ready.
And then while you are preparing and cooking, I want you to be safe and hygienic.
And I want you to think about the food skills that you are using, again, so you are safe, and use them precisely and accurately too.
And here's our recipe.
And I want you to be really creative.
I'm sure you and your teacher have thought about this, the sorts of things that you might use.
So I want you to use at least two types of fruits and vegetables.
And then you can choose one thing like cooked rice, noodles, pasta, couscous, or potatoes, and then maybe some beans, hummus, tofu, egg, cheese, tuna, chicken or ham.
And lastly, you could use some salad dressing.
And then depending on what ingredients you've chosen, you need to make sure you've got the right equipment too.
And then you need to make your salad.
So you need to peel, grate, and cut your fruits and vegetables.
Then you need to layer the ingredients or mix everything together, depending on what you want it to look like.
And then lastly, you can pour over the salad dressing.
And remember you can layer or mix the ingredients altogether, or you can slice the tofu, or egg if you're using that, or you might grate the cheese.

The other person put, "I liked the layers, but the smell was a bit off-putting." Oh dear.
That's a shame.
The other person, look, put, "Looked fresh and good to eat.
I liked the fishy smell." Or lastly, "It tasted crunchy and I liked the different colourful veg." So you can see here they've used lots of different words to describe the salad.
